Chia Pudding, Pineapple & Goji coulis

I don't know about you but this stunning weather here in NZ at the moment is my best energy booster... If I see blue sky when I wake up in the morning I tend to start the day ready to take on the world!
Sun exposure improves brain fonction, sleep quality, enhances the immune system, creates Vitamin D and so on. I will make it quick : it is good for you! Grabbing 10 to 15 minutes of direct sun exposure (without sunscreen) daily will have the most positive effects on both body and mind.
So this weather has inspired my recipe for this week, I felt like colour, warmth and flavours invoking summer.




CHIA PUDDING, PINEAPPLE & GOJI COULIS
(one large serving)

CHIA PUDDING
1/3 chia seeds
1C coconut cream
1t maple syrup



PINEAPPLE & GOJI COULIS
1/2 C pineapple cut into cubes and frozen
3/4 C coconut milk
1T goji berries
1t maple syrup



TOPPING
1t goji berries
1t desiccated coconut
1t crumbed pistachios



The night before mix all ingredients for the chia pudding and let set in the fridge. Stir the mixture in the morning and pour it in a nice jar.
Put all the coulis ingredients in a blender and whizz till smooth, adding more coconut milk if needed. Pour the coulis over the chia pudding.
Sprinkle goji berries, desiccated coconut and pistachio over the top.


If you happen to have some coulis left just add water and you can have yourself a nice smoothie whilst taking your 15 minutes of sunlight!
