Peanut butter bliss balls

I have had a lot of experiments with peanut and peanut butter this past week.
Mainly because I read so many good things about it.
Do you know that if you had to pick one nut it should be peanut? They are by far more nutritious than any other nut, in fact they are not a nut but a legume. They have all the benefits of nuts and a few added bonuses such as being higher in proteins, a great source of vitamin E & folate, and mostly they are one of the richest source of resveratol, a heart protecting and cancer preventive antioxidant. Not to mention they are easy to find and dirt cheap, make sure that you buy them raw though, roasted & salted peanuts are nasty... I find raw peanuts in the baking isle of PakNsave here in New Zealand.
PEANUT BUTTER BLISS BALLS
FOR THE BALLS
1/2 C raw peanuts
1/2 C very soft dates
1/4 C raw peanut butter
1 t vanilla bean paste
FOR THE CHOCOLATE COATING
1/3 C coconut oil, melted
1T cacao powder
1T pure maple syrup
Using a food processor fitted with the S blade, blend the peanuts until fine (not too long though or you will start to get peanut butter!). Add the dates and blend until you get a dough consistency. Add the peanut butter and vanilla and blend one last time. Roll the dough into balls and place in the fridge.
Prepare the chocolate coating by mixing all the ingredients in a bowl and whisking by hand for a couple of minutes. Let the coating set slightly so that it is no longer runny.
Pour the coating over the peanut butter balls and place back in the fridge to set.
These guys are meant to live in the fridge and will keep for at least 5 days… that is if they make it to 5 days…
