I have always loved a good smoothie and the latest smoothie bowl craze could not make me happier.
Smoothie with extra yum, what's not to love?!
PINEAPPLE COCONUT SMOOTHIE BOWL
(1 serving)
1/4 of pineapple, cut into cubes and frozen
1 handful of baby spinach
200ml coconut milk
Garnish with:
1 kiwi fruit, thinly sliced
goji berries
chia seeds
flax seeds
desiccated coconut
baby spinach leaves
Blend frozen pineapple, baby spinach and coconut milk in a blender. Add more coconut milk if you prefer a runnier consistency.
Pour this mix into a bowl or soup plate and top with sliced kiwi fruit, goji berries, chia seeds, flax seeds, desiccated coconut and baby spinach… and then say YUM X
